Jenna's Wild Wild Berry Pie
Ingredients
- 1 pre-made pie crust (store-bought)
- 2 cups whole milk
- 1/2 cup sugar
- 1/4 cup cornstarch
- 1/4 teaspoon salt
- 4 large egg yolks
- 2 tablespoons unsalted butter
- 1 teaspoon vanilla extract
- 1 cup fresh blueberries
- 1 cup fresh raspberries
- 1 cup fresh strawberries, hulled and sliced
- 1/4 cup sugar
- 1 tablespoon lemon juice.
1) Prepare the crust
Bake the pre-made pie crust according to package directions until golden brown. Let it cool completely.
2) Make the pastry cream
- In a saucepan, heat the milk over medium heat until it just begins to simmer. In a bowl, whisk together the sugar, cornstarch, and salt. In another bowl, whisk the egg yolks until pale.
- Gradually pour the hot milk into the egg yolks, whisking constantly to temper the eggs. Then, pour the mixture back into the saucepan.
- Cook over medium heat, whisking constantly until it thickens and bubbles. Remove from heat and stir in the butter and vanilla extract.
- Transfer to a bowl, cover with plastic wrap (pressing it directly onto the surface), and let it cool.
3) Macerate the berries
In a bowl, combine the blueberries, raspberries, and a portion of the sliced strawberries with sugar and lemon juice. Toss gently
and let sit for about 15-20 minutes to release their juices.
4) Assemble the pie
- Spread the cooled pastry cream evenly into the cooled pie crust.
- Layer the remaining sliced strawberries over the pastry cream.
- Pour a generous layer of freshly whipped cream over the strawberries.
5) Top with macerated berries
Spoon the macerated berries over the whipped cream.
6) Chill and Serve
Refrigerate the pie for at least 30 minutes before serving.
